What is freeze-drying? 

Freeze-drying is a three-step process that begins with freezing. It is a low-temperature dehydration process that involves freezing the product, lowering the pressure, then removing the ice by sublimation. Freeze-drying is different from other conventional drying methods. Other drying methods evaporate water by using a heat drying process.
