We've found another great way to add more KOYAH to your daily dish. This vegan kale pesto is the perfect spread. Its super easy and goes great on pizza, past and more.
2 cups tightly packed fresh basil
1/2 cup walnuts & pine nuts
2-4 cloves garlic
1/2 cup extra-virgin olive oil
Sea salt and freshly ground pepper, to taste
1-2 tablespoon lemon juice
3-4 tablespoons nutritional yeast
1 scoop of KOYAH kale powder (or 1 cup of fresh Kale)
1/2-1 tablespoon of water for consistency
In your blender or food processor, add the basil, nuts, garlic, lemon juice, nutritional yeast, sea salt and about half of the olive oil. Blend on high until a loose paste forms.
Add the rest of the olive oil a little at a time and scrape down sides as needed. Then add 1/2-1 Tbsp of water until you reach your desired consistency. I like mine on the thick side.
Taste and adjust flavor as needed, add more nutritional yeast to give it that "cheesy" flavor, salt for overall flavor, nuts for creamy and nuttiness, garlic and lemon juice some for some zing.
