Chia seeds are a popular superfood coming from the ancient grain family. We love incorporating these nutrient dense seeds in our recipes. Just to name a few of the health benefits, chia seeds contain: protein, fiber, essential fatty acids, vitamins and minerals.
It made total sense to come up with our own chia seed pudding. This pudding is a great binder for smoothie bowls, overnight oats, a midnight snack and more. We love simple dishes that have multiple purposes.
In a bowl combine:
1 can of coconut milk
1 scoop KOYAH kale
1-2 tbsp maple syrup
2 tbsp chia seeds
dash of vanilla extract
Stir until everything is evenly mixed. Place in the fridge 4-6 hours. Overnight preferably.
